But, if you want a real treat I recommend making homemadepuff pastry. It’s easier than you think! Plus, you can make the dough ahead, freeze it and make the cookies later to make things easy.

Whichever you choose, they both work great. So, if you’re short on time use the pre-madedoughbut be sure to thaw it first in therefrigeratorbefore you make thepalmiers.

How to Make Them

Combine the sugar andcinnamonin a small bowl.

Unroll the thawed puff pastry on a work surface. Use a rolling pin to lightly roll it out in a rectangle with an even thickness.

Sprinkle the cinnamon-sugar mixture over the top of the dough. Use the rolling pin again to lightly roll the mixture into the dough. Use a light hand, you just need to adhere the sugar to the dough.

Starting at one short end of the dough, roll it into itself like a jelly roll or pinwheel. Stop once you reach the center and then roll the other end the same way so the two rolls meet in the middle of the dough. They should be even in size. Cover the roll with plastic wrap.

Place the roll in therefrigeratortochillfor 30 minutes. This will firm up thebutterin the pastry so yourpalmiersare flaky once baked. While thedoughchills, heat theovento 375°F (190°C) and line abaking sheetorsheet panwithparchment paper.

Take the roll out of therefrigeratorand place it on a cutting board. Use asharp knifetosliceacross the roll to makecookiesthat are 1/4″ to 1/2″ thick. Place them on the preparedbaking sheet.

Bakethecookiesfor 10 minutes and then turn them over.Bakethem for five to 10 minutes longer or until they aregolden brown. Allow them to cool on awire rackbefore serving.

Ingredients

  • 1 package puff pastry
  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  • In a small bowl mix together the sugar and cinnamon.

  • Unroll the pastry (de frost if frozen), lightly roll to even it out, sprinkle with sugar mixture, and lightly roll on top to trap the sugar into the pastry.

  • Roll the dough from each end into the middle making sure they are even. Refrigerate for 30 minutes while the oven is pre-heating.

  • Pre-heat oven to 375F (190C) Line a cookie sheet with parchment paper.

  • Remove from the fridge and cut into ¼-⅓ inch slices, bake for approximately 10 minutes then carefully flip them over and continue to bake for another 5-10 or until golden. Let cool and serve. Enjoy!
