- 1 1⁄2 cups wheat bran or 1 1/2 cups oat bran
- 1 cup buttermilk (or soy buttermilk, Soy "Buttermilk", to make them dairy-free)
- 1⁄3 cup vegetable oil (can replace all or some with applesauce to make them lower fat)
- 1 eggs or 1/4 cup Egg Beaters egg substitute
- 2⁄3 cup brown sugar
- 1⁄2 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1⁄2 teaspoon salt
- 1⁄2 cup raisins

directions
- Preheat oven to 375 degrees.
- Grease muffin cups or line with paper muffin liners.
- Mix together wheat bran and buttermilk; let stand for 10 minutes.
- Beat together oil, egg, sugar and vanilla and add to buttermilk/bran mixture.
- Sift together flour, baking soda, baking powder, cinnamon, and salt.
- Stir flour mixture into buttermilk mixture, until just blended.
- Fold in raisins and spoon batter into prepared muffin tins.
- Bake for 15 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Cool and enjoy!

These are excellent! The reviews are true!! The only modification I made was instead of the raisins, I folded in a banana or two that I chopped into small pieces. Delicious! Thanks Kree, for posting this recipe:)

These are moist & delicious. I added 2 T wheat germ, 3T cinnamon applesauce, 1 1/2 c blueberries, and 1 med banana diced small to the original recipe. So moist and perfect. Great breakfast muffins.

Very good! Used 1/2 whole wheat flour and 1/2 white flour and kept the rest of the recipe as-is. Tastes wonderful! Thanks!

Great Muffin! I added an extra egg, used half whole wheat flour, and added 1/4 cup white sugar. PERFECT!

This is a great bran muffin recipe! The flavor and texture are both wonderful. I had to do a few substitutions (oat bran, cranberries instead of raisins, vinegar-soured-milk instead of buttermilk) and they were still wonderful. The recipe seems very adaptable, and I plan on trying lots of variations! Thanks for posting this Kree.

Used whole wheat flour (instead of all purpose flour), reduced the sugar to 1/2 cup using white sugar (instead of brown), and used unsweetened kefir (instead of buttermilk)

I used Splenda Brown sugar blend, increased the raisins to 3/4 cup and also increased the apple sauce to 1/2 cup.

I was looking for a new Bran Muffin recipe after not having made any for quite awhile and thought this one sounded good...and it was! I did change a few things...used applesauce instead of oil and cut the sugar to 1/2 cup, added 1 Tbsp of molasses because I like them in a bran muffin. I also used about 1/3 cup dates (as that was all I had) and they added a lovely sweetness. They were excellent!!! It only made 8 muffins though and I only used regular sized muffin trays. I think next time I will add a bit more molasses and less sugar, maybe 1/3 cup and about 1/2 cup dates. These are great!

Delicious and very easy to make. I used applesauce instead of oil and instead of the buttermilk I used low fat Greek yogurt. I also added a few tablespoons of chia seeds for their nutritional content. I was worried that the muffins wouldn't be sweet enough but they tasted great. I used pumpkin pie spice instead of just cinnamon. I may even try less sugar next time--and there will be a next time! Thanks for posting.
